1 lb parnips, peeled and cut into 1/2-inch rounds
1 head roasted garlic, cloves peeled
1/4 cup milk plus more to taste
2 Tbsp butter plus more if desired
Salt and pepper to taste
Steam or boil the parsnips until tender. Mash in a bowl with the garlic, milk, and butter until they reach the desired consistency. Add salt and pepper. Serve hot.
Serves 4-6.
